FOSSENCE® is produced through
biotransformation of sucrose (cane sugar) by the action of a microbial, cell bound enzyme Beta-fructofuranosidase/fructosyltransferase from A. pullulans. The FOS produced from this process is a short chain Fructo-oligosaccharide (scFOS) having a DP of 3-5.
On the other hand, FOS derived from Chicory root follows a process of extractions methods involving treating the roots at 70-90 degC, solvent precipitation, partial enzyme degradation if required, and purification. This yields Inulin/FOS that has a longer DP of 2-60.
